72% Tanzania Dark Chocolate

This is the bar that started it all.

It was the first chocolate bar I ever made, and the one that sent me down this entire craft chocolate adventure.

The first time I tasted a bar with the beans I'm using, I was struck by something completely unexpected. There was fruit in the chocolate . . . bright, almost familiar . . . but I couldn't quite name it. Raspberry? Cherry? Plum? Something tropical? I kept searching for the flavor.

Then it hit me . . . there wasn't any fruit in it . . . 

I had just tasted chocolate for the first time in my life.

Not chocolate as a flavor added to something. Not the familiar taste I'd grown up thinking of as "dark chocolate." This was the flavor of the cacao itself — naturally fruity, bright and complex, with that fruit eventually giving way to the deep, rich chocolate underneath.

That moment changed everything for me. It made me wonder what else cacao could taste like.

I've been trying to answer that question ever since.
